Diet contains carbohydrates in three forms;

  • Polysaccharides; as starch and cellulose present in cereal grains, potato, tubers and fruits.

  • Disaccharides; present as sucrose in cane sugar, lactose in milk and maltose in malt.

  • Monosaccharides; present as glucose, fructose and galactose.

  • Polysaccharides and disaccharides are broken down to monosaccharides during digestion.
